Sarah's Lovely Thai Green Curry!


What you need to make Sarah's Lovely Thai Green Curry

1tbsp vegetable oil
2tbsp green curry paste
1tbsp soft dark brown sugar
2 stalks of lemongrass
4 lovely chicken breasts
6 kaffir lime leaves/or lime zest
400ml coconut milk
thai fish sauce/or light soy sauce
coriander, chopped
juice of 1 lime
handful green beans
fragrant rice

How to make Sarah's Lovely Thai Green Curry!

1. Heat vegetable oil in a pan and add curry paste.

2. Add brown sugar and lemongrass and reduce heat.

3. Add lovely chicken and lime leaves and stir until chicken is coated.

4. Add coconut milk and a good shaking of fish sauce, add green beans and simmer for 25 minutes until thick.

5. Stir in coriander and lime juice. Stir for 5 minutes and serve with fragrant rice.

Sarah's Lovely Broccoli Soup


What you need to make Sarah's Lovely Broccoli Soup

350g/12oz lovely broccoli
1 lovely leek, sliced
1 celery stick, sliced
1 garlic clove, crushed
350g/12oz lovely potatoes, peeled and diced
1 litre/1 3/4 pints vegetable stock
1 bay leaf
1tbsp freshly ground black pepper
crusty bread and croutons, to serve

How to make Sarah's Lovely Broccoli Soup!

1. Cut lovely broccoli into florets and put to one side. Cut the thicker lovely broccoli stalks into half inch dice and throw into large saucepan with the lovely leek, celery, garlic, lovely potatoe, stock and bay leaf. Bring to the boil, cover and simmer for 15 minutes.

2. Throw in lovely broccoli florets and simmer for further 5 minutes.

3. Leave soup to cool slightly and remove and discard bay leaf.

4. Pour soup into a blender and whizz until smooth.

5. Return soup to saucepan and heat through, season to taste with pepper.

6. Ladle soup into bowls and serve with bread and croutons.

Sarah's Lovely Chicken Curry!


What you need to make Sarah's Lovely Chicken Curry!

1 lovely onion
2 cloves of crushed garlic
1 tsp of ground coriander
1 tsp of hot chilli powder
1 tsp of turmuric
1 tbsp of tomato puree
2 tbsp of lovely plain yoghurt
1 handful of sliced button mushrooms
1 half pint of water
2 lovely chicken breasts

How to make Sarah's Lovely Chicken Curry!

1. Chop lovely onion and fry with a little oil and add crushed garlic. Fry until lovely brown.

2. Add spices and dry fry for 2 to 3 minutes.

3. Add lovely chicken and fry for 5 minutes.

4. Add water and stir well until bubbly.

5. Add yoghurt and tomato puree and stir well.

6. Add sliced mushrooms and stir well.

7. Season well and leave to simmer for twenty minutes.

8. Serve with rice or potato wedges.

Sarah's Lovely Fishcakes!


What you need to make Sarah's Lovely Fishcakes!

1lb of lovely potatos
1lb of lovely cod fillets
2tbsp of lovely chopped fresh parsley
grated zest of 1 lovely lemon
1tbsp of plain flour
1 lovely egg | beaten
4oz of lovely breadcrumbs | made from 1 day old bread
4tbsp of vegetable oil

How to make Sarah's Lovely Fishcakes!


1. Peel, boil and mash potatos until lovely and smooth

2. Steam lovely cod until just cooked | I find microwaving easiest. Drain the lovely cod and when cool enough flake with fingers.

3. Mix lovely potatos with the fish, parsley and lovely lemon zest and season well. Then shape into lovely flat round cakes.

4. Dust the lovely cakes with flour, dip them into the lovely beaten egg then coat thoroughly in the bread crumbs. Allow to cool for at least half an hour.

5. Heat oil in a frying pan and fry lovely cakes over a medium heat for 5 minutes on each side. Be careful when turning.

6. Serve with salad and enjoy Sarah's Lovely Fishcakes!
